Local Bites: Petite Boulangerie On your next trip to the market, let your nose lead you to one of our newest vendors, Daniel Riesenberger of Petite Boulangerie, specializing in organic sourdough breads crafted in the old-world traditions of fine bread-making. Daniel honed his craft while working at Northstar Café before turning his passion to his own bakery focused on hand-crafted, all-natural sourdough breads. All Petite Boulangerie breads are made from organic flours, select sea salts and spring water paired with a ‘wild’ fermentation process and seasonal local ingredients, such as the natural bacon used in his popular Bacon Baguettes. Daniel bakes all his breads in a wood-fired brick oven to achieve their signature deep crust. Daniel brings a consistent selection of breads to each market along with four or five varying weekly offerings, based on his inspiration that week. Market regulars know to arrive early to claim a Roasted Garlic Asiago before they’re gone – Daniel has sold out of this popular bread every week. To place a special order, please call 614-271-8489.
